Are we bored yet?
Like I mentioned in a previous post, a few of the menu items I’ve posted have been juggled for various reasons. Last night we made steak sandwiches and they were awesome!
Monday: ‘Philly’ Steak sandwiches: saute half a sweet onion and green and red peppers that have been thinly sliced in a little olive oil, salt and pepper. Saute until onions are translucent. Add a clove of diced garlic and saute for one minute. Add leftover flank steak, also thinly sliced. Let steak warm through, then transfer mixture to a toasted hoagie roll. We added Havarti to our sandwiches and toasted them under the broiler. They were awesome. An easy and yummy dinner in literally about ten minutes.
Tuesday: Chicken Enchiladas
Wednesday: Barbecued chicken, rice pilaf (from a box!) and green salad
Thursday: Linguine with meat sauce and green salad. I use sun dried tomato chicken sausages from Costco that are delicious. I start with a jar of grocery store sauce and dice up zucchini, grated carrot, a can of tomatoes and half and onion and add those. Then I add a heaping tablespoon of pesto, at least one clove of garlic, sometimes two, a splash of red wine vinegar, a teaspoon of sugar and then salt the whole thing liberally. If I have an open bottle of red wine, I use that instead of the vinegar. Then, I let the sauce simmer for several hours. This is the key with marinara sauce, to give all the flavors time to develop.

Today I’m going to make my first attempt at making baby food. I’ve got sweet potatoes, green beans and broccoli to make!
