Peach Blueberry Crisp

Sweet peaches, tart blueberries, a dash of sugar and a little squeeze of lemon…

Top with a crust of oats, brown sugar, shredded coconut, slivered almonds, cinnamon and butter…

Bake at 350 degrees until fruit is bubbly and the crust is golden brown. Devour immediately. Best served warm with a small scoop of ice cream or whip cream on top.

*This would be the part of the blog post where I show you a beautiful shot of the completed crisp, but I forgot and then we ate it all…oops.

Recipe:

  • 4 to 5 ripe peaches, cubed or sliced
  • 1.5 cups blueberries
  • 1 tablespoon flour
  • 1 tablespoon brown sugar
  • 2 tablespoons fresh lemon juice

For topping:

  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/3 cup slivered almonds
  • 1/2 cup butter (1 stick)
  • 1 teaspoon cinnamon

Mix dry ingredients together. Melt butter. Mix butter into dry ingredients until small crumbs appear. Pour mixture over prepared fruit and bake at 350 degrees for about 30 -35 minutes. The coconut and almonds can obviously be omitted, but they add great texture and depth of flavor. And oddly enough, peaches and coconut are an awesome combination.
