Really Yummy (no seriously) Bran Muffins

On a whim I bought ground flaxseed meal at the grocery store. I figured I would sprinkle it on oatmeal and hide it in a few baked goods. As I was putting the groceries away, the recipe on the side of the package caught my eye. It looked like a hybrid carrot cake/bran muffin and I realized I had all the ingredients on hand.

I made them last night, stored the batter in the fridge and made a few this morning. They are seriously good; hearty, moist, flavorful and best of all, filling. They are especially good straight from the oven with a little butter and a big cup of coffee. At least that’s how I had mine.

Yummy Bran Flax Muffins

  • 1 1/2 cups all-purpose flour
  • 3/4 cup oat bran
  • 3/4 cup flaxssed meal
  • 1 cup brown sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 cup carrots, shredded
  • 1 apple, peeled and shredded
  • 1/2 cup raisins
  • 1/2 cup chopped nuts (I used slivered almonds)
  • 3/4 cup milk (I used low-fat buttermilk)
  • 2 eggs, beaten
  • 1/2 cup canola oil
  • 1 tsp. vanilla

Mix flour, bran, flaxssed, sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Combine milk, eggs, oil and vanilla. Pour liquid ingredients into dry ingredients and stir until combined. Do NOT overmix. Fill muffin cups and bake at 350 degrees for 15-20 minutes.

    Those look delicious. Maybe you could bring some to the beach house (hint, hint)
